From Saturday until July 22, the snowy spectacle attracts 55,000 visitors each year.
There’ll be ice skating, tobogganing and a host of fun virtual reality experiences.
Jeannine Rheinberger, Hunter Valley Gardens' head of marketing, said Snowtime is highly anticipated each year.
"It attracts 55,000 visitors annually and it's great fun for the whole family," she said.
"Our new attraction this year is the 9D virtual reality snow adventure which we're sure is going to be really popular."
In a nutshell people sit in the chair, put on their 3D glasses and off they go on a snow adventure - icy bumps in the snow, water spraying, wind blowing ... the lot.
“The ice skating rink is always popular too, and this year the toboggan is bigger than before."
If all that's not enough, children younger than three are free.
